Good Food on a Grand Scale
Vail Resorts will serve natural, hormone-free meats and poultry and organic dairy products in our on-mountain restaurants at Vail, Beaver Creek, Breckenridge and Keystone and Heavenly beginning in November for the 2007-2008 ski season.
Our resorts will prepare and serve over 447,000 pounds of Coleman Natural meats and nearly 189,000 pounds of Horizon Organic butter, cheese and yogurt, plus 64,000 gallons of certified organic milk and cream.
Our five mountain resorts serve over 2.5 million lunches each ski season at approximately 40 on-mountain venues. The organic dairy products and natural meats procured through the Good Food Partnership will be used to prepare meals in on-mountain kitchens by our resort chefs.
The Company is currently serving hormone-free natural beef patties, chicken breasts, breaded chicken breasts, chicken nuggets, beef franks, bacon, roast beef, oven-roasted turkey breast , ground beef, chicken wings, honey maple ham, smoked turkey breast, pork stew, beef brisket and Black Forest ham provided by Coleman Natural Foods and organic butter, a variety of organic milk offerings, soy milk, cottage cheese, several flavors of creams, plain and flavored yogurts,heavy whipping cream, half and half and whipped cream provided by Horizon Organic.
In November, Vail Resorts purchased 10,917 pounds of Coleman product in Colorado - that's 5,215 pounds of ground beef, 3,090 pounds of chicken, 1,180 pounds of hot dogs, 337 pounds of turkey, 420 pounds of beef brisket and 150 pounds of prok.
Starting Dec. 14, Vail Resorts will offer on-mountain meals made with organic cheeses from Horizon Organics including cheddar jack, Monterey jack, mozzarella, blended pizza cheese, sharp cheddar and pepper jack.Vail Resorts will work closely with all of its vendors to increase the amount of natural meat and organic dairy products offered to its on-mountain guests this season and in future seasons.

Horizon Organic Dairy Products
Horizon Organic is the nation’s leading brand of U.S.D.A certified organic milk with more than 80 products produced without the use of antibiotics, added growth hormones or pesticides. Through our partnership with Horizon Organic, our resorts will prepare meals at on-mountain dining locations during the ski season using organic dairy products such as butter, cheese, milk and yogurt.
A First Step
Our announcement represents our first step in serving Good Food on a Grand Scale. While approximately 90 percent of our fresh meat will be purchased from Coleman Natural and 87 percent of our fresh dairy needs will be organic for the 2007-2008 season, our Company will work closely with all of our vendors to increase the amount of natural and organic foods offered for the 2008-2009 season and beyond.
